Raspberry Tart

Makes one 9-inch (22.5 cm) tart

Ingredients:

  • 2 tablespoons confectioners’ sugar
  • ½ cup butter
  • 1 cup all-purpose flour
  • 4 cups fresh raspberries
  • 1 jar (8-ounce or 224 gm) raspberry jam

Directions

  1. Mix the flour, butter and sugar together in a medium bowl until blended.
  2. Let it chill for 1 hour.
  3. Set the oven to 375°F (190°C) and spoon the chilled mixture into a 9 inch tart pan.
  4. Let it bake for 10 minutes.
  5. Take it out and let it cool.
  6. Top with raspberries in the crust.
  7. Microwave the jam until it boils and pour over the fruit.
  8. Cover and set it in the refrigerator for 1 hour.
